Biker’s Napa Salad 

1 head Napa Cabbage  (chopped) 
1 pkg. slivered almonds (4 oz) 
1 pkg. sunflower seeds (3 oz) 
1 pkg. Oriental Ramen Noodles

 Brown noodles, almonds and sunflower seeds in 1 T oil.  Set aside to cool

Ramen Noodle flavor pkg. 
½ c oil 
½ c sugar 
¼ c vinegar 
1 T soy sauce 
1 t dry mustard

 Blend dressing ingredients in blender.

 Immediately before serving, mix chopped napa cabbage, noodles, almonds and sesame seeds, and the dressing.




 Orzo-Feta Salad

1 c pine nuts, almonds, or pecans (toasted and chopped) 
1-16 oz. Pkg. Orzo cooked 
1 green pepper chopped 
1 yellow pepper chopped 
1 red pepper chopped 
1 medium purple onion chopped 
2/3 c olive oil 
1/4 c white wine vinegar 
1 t salt 
3/4 t pepper 
1/3 c chopped fresh dill 
4 oz pkg feta

 Stir together nuts, orzo, onion, pepper

Whisk oil and next 4 ingredients

Add to orzo mixture and toss

 Sprinkle feta cheese just before serving.
